Cafe au Lait
A Cafe au Lait is similar to a Caffe Latte except it is generally made with brewed coffee instead of espresso in a ratio of 1:1 milk to coffee with sugar added to taste.

Caffe Latte
1 shot espresso
6-8 oz. steamed milk.

Note that a caffe latte is not made with boiled milk.

Caffé Mocha
1 shot espresso
8 oz. hot milk
7 grams European Chocolate OR 1 oz. Chocolate Syrup

Top with whipped cream and dust with chocolate powder.

Cafe Mexicano
Coffee
1/4 cup heavy cream
2 1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 tbs. sugar
4 tsp. chocolate sauce

Whip cream with 1/4 tsp. cinnamon, nutmeg and sugar. Place 1 tsp. chocolate sauce into the bottom of four demitasse cups and add 1/2 tsp. the cinnamon to the brewed coffee. Pour coffee into the cups and stir to mix with the syrup. Spoon on the whipped cream mixture.

Cappuccino
1 shot espresso
3 oz. steamed milk
Frothed milk

Spoon frothed milk to espresso, then pour in remaining steamed milk. Coffee shops often add considerably more milk than called for in this traditional recipe, but try these proportions first for an ideal cappuccino.

Iced Cappuccino
60 oz. dark roasted coffee, brewed
2 oz. simple sugar syrup
8 oz. milk

Add simple sugar syrup to brewed coffee allow to cool (which can be accelerated in the refrigerator). Pour sweetened coffee into a pitcher and refrigerate until ready to serve. Add milk when coffee has cooled. Serve over ice.

Iced Coffee
60 oz. brewed coffee

If desired, add sugar to the freshly brewed coffee, and mix thoroughly while hot. Allow coffee to cool, and keep it refrigerated if not to be used immediately. Keep coffee covered during refrigeration. Add half-and-half or whole milk to create a richer taste and pleasant color.

Latte Breve
This is simply a latte made with steamed half-and-half instead of milk.

Macchiato
1 shot espresso
1 dollop milk

"Mark" the espresso with a shot of hot milk (about 4 parts espresso to 1 part milk). Italians commonly add a teaspoon of sugar to a macchiato. Warning: the so-called "macchiato" served by certain coffee chains is not a proper macchiato, but a latte, sometimes flavored.

Thai Iced Coffee
4 cups strong brewed coffee
4 tbs. sugar
4 tbs. heavy cream
2 tsp. ground cardamom
1 tsp. almond flavoring
Crushed ice

Add the cardamom to the ground coffee before brewing. Once the coffee is brewed, mix in sugar and almond flavoring. Allow the coffe to cool to room temperature. Fill four 12-oz. glasses half full with crushed ice, and fill two-thirds full with coffee. Stir about 1 tbsp. of heavy cream into each glass. Coffee and cream may be layered.
